6 Month Project / Pre-Opening Management

Designed both bars and the wine cellar, O&E selection, developed the wine list with 400 references, and partnered with key wine suppliers and brands.

Adjusted the cocktail menu to align with the local market, negotiated over 70,000 euro deals with key beverage suppliers and brands, and implemented a pricing strategy that meets budgeted margins of 22% COGS.
